"Acapulco tonight, right Ji?"

On our honeymoon in Cancun almost 7 years ago now, people promoting the club CocoBongo would beg of us as we walked by the club, "CocoBongo tonight, right guys?" (Imagine a thick accent!) It became a big joke and now when we go out for Mexican food I always say, "Acapulco tonight, right Ji?" Ji is a nickname for Kyle (a shortened form of Jiles). Acapulco is nothing fancy at all--a family owned chain of 5 restaurants in the metro area. We happen to be hooked on their Mahi Mahi Fish Tacos! Two mega-fresh, piping hot tacos served with cheese, lettuce, pico, and green salsa (no rice and beans cluttering the plate to waste your time before you get to the good stuff) for $4.95! They are a steal! We sometimes feel guilty that our bill is not even $15 for 2 plates and 2 sodas. Some of the wait staff even know what we order when they see us come to the table--which has always been a really corny dream of ours! :-) Another huge perk is that they, without a doubt, always have the Twins game on for us to watch...a perfect Friday night date in the summer, and tonight a family meal with my mom as our guest! Thanks for crank'n up the heat 5 notches on the salsa mom--loved it!
